Cooking is a big part of Christmas. Each year as part of Christmas traditions, many people bake cakes, candy, and cookies to share with their friends and relatives (Santa too!). We would like to share some Christmas recipes with you.

Here are some of Vici's favorite Christmas recipes:

Chocolate Crinkles Cookies
1/2 cup shortening
1 2/3 cups granulated sugar
2 teaspoons vanilla
2 eggs
2 1-oz pkg. unsweetened melted chocolate
2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoons salt
1/3 cup milk
1/2 cup chopped pecans
Sifted confectioners' sugar

Thoroughly cream shortening, sugar, and vanilla. Beat in eggs, then chocolate. Sift together dry ingredients; blend in alternately with milk. Add nuts. Chill 3 hours. Form in 1-inch balls. Roll in confectioners' sugar. Place on greased cookie sheet 2 to 3 inches apart. Bake in moderate oven (350 degrees) about 7 to 8 minutes. Cool slightly; remove from sheet. Makes 4 dozen.

Mince-Meat Cookies
3 1/4 cups sifted flour
1/2 teaspoons salt
1 teaspoon soda
1 cup shortening
1 1/2 cups granulated sugar
3 eggs, well beaten
1 9-oz pkg mince-meat (Borden's)
1 apple, grated
1/2 cup chopped cherries
1 cup chopped pecans

Mix sugar and eggs together in large mixing bowl. Then add shortening. Gradually add dry ingredients (flour, salt, and soda). By hand, add mince-meat (broken into small pieces), apple, cherries, and nuts. Drop by teaspoon 2 inches apart on greased baking sheet. Bake 400 degrees about 9 minutes. (When cookies are done, they will be soft.) Makes 7 dozen.

Vici's Christmas Rum Cake
1 box Duncan Hines Moist Deluxe Yellow Cake mix
1/2 cup sugar
3/4 cup vegetable oil
5 eggs
1 cup sour cream
1 cup chopped pecans
1 tablespoon cinnamon
2 tablespoon brown sugar
Rum Sauce (recipe follows)

Grease and flour a tube or Bundt pan. Preheat oven to 350 F.

Combine cake mix, sugar, oil, eggs and sour cream. Blend with electric mixer at low speed until ingredients are moistened. Beat at medium speed for 2 minutes. Stir in pecans.

Pour half of batter into prepared pan. Combine cinnamon and brown sugar. Sprinkle over batter. Pour remaining batter into pan. Bake for 45 minutes or until a toothpick inserted in cake comes out clean.

Allow cake to cool 10 minutes. Pour Rum Sauce over cake in pan. Cool at least 90 minutes before turning out of pan. Makes 12 servings.

Rum Sauce: In small saucepan, combine 1 cup sugar and 1/4 cup water. Over high heat, stir to dissolve sugar and bring liquid to a boil. Add 1/2 cup dark rum (Mount Gay Barbados Rum is the best), stir to mix and remove from heat. Allow to cool slightly and pour over warm cake in pan.
